FWE's HHS-IR Series Heated Holding Shelves are specifically designed to maximize your holding time of fried, crispy, and wrapped food products by utilizing our infrared heating system. The long wave infrared elements are positioned to keep product within the ideal range to keep the outside coating crisp while maintaining the internal temperature and moisture of the items like fried chicken and French fries.
While either batch cooking or staging prior to a busy period, these units are an invaluable companion to any kitchen that has fried foods on its menu!
Designed with durability and reliability in mind, our HHS-IR line is constructed with high quality stainless steel and has no moving parts, such as fans, that tend to become clogged with grease or other debris that commonly occurs from holding fried foods. This makes cleaning up a breeze and allows operators to focus on other, more important aspects of their business.
Despite this line of product's small size, their unique design eases the burden on kitchens with limited space or adds another dimension to a more robust kitchen with their versatile, adjustable legs. Their unique design means that each shelf of these units can hold one full-sized hotel pan, or two half-size hotel pans full of fried foods!
The adjustable legs and unit designs that range from one to three shelves mean that these units can be placed where they are needed most within almost any kitchen. Either on the make line, on top of other holding cabinets, or even the window where food runners will grab the plates of food to take to the table, the HHS-IR holding shelves will become an indispensable companion to any kitchen serving fried foods.
HHS-IR-2-1220-4 Model Description
The HHS-IR-2-1220-4 is a small step up in size, but a large step up in capacity. This model has two shelves, each capable of holding two full-size (12x20, GN1/1) or four half-size (12x10, GN1/2) hotel pans. To accommodate this larger heating area, this model comes with four infrared heating elements, two per shelf, to evenly distribute heat and maintain a food's "just-cooked" quality for up to one hour.
