The Infrared Headed Holding Shelves (HHS-IR) series is specifically designed to maintain a product’s “just-cooked”, crispy, and ready-to-serve quality for extended periods of time. This allows for batch cooking, particularly with fried foods, and staging prior to busy periods. This eases the strain on kitchens that might experience bottlenecks, being short-staffed, have limited space to operate with, or any other unknown that might occur in typical food service operations.
Designed with convenience and reliability in mind, our HHS-IR line of products contains no moving parts, such as fans, that tend to become clogged with grease, or other debris, that commonly occurs from holding fried foods. This makes cleaning up a breeze and allows operators to focus on other, more important aspects of their business.
This heat system uses longwave infrared elements to maximize the hold times of crispy, fried foods such as fried chicken, french fries, onion rings, etc. The infrared elements are mounted directly above the area where the products are held to deliver the infrared heat quickly and directly.
